茄子
白芝麻 少許
小豆苗 少許 (香菜可)
醬料:
即食味噌 2大匙
(註:你也可以用白味噌1大匙;或是紅、白味噌各0.5大匙,混在一起。)
烹大師柴魚粉 0.5茶匙
水 1大匙
糖 1大匙
米林 1茶匙

Ingredients :
*Eggplant x 1
*White sesame 1 tsp
*Snow pea sprout or spring onion for garnishing
Sauce:
*2 tbsp Hikari Miso’s Minute Miso Organic (Original)
(PS: If you cannot find Minute Miso – Sweet, you can substitute with 1 Tbsp. miso paste(awase miso or white miso or white & red miso 0.5 tbsp each), 0.5tsp hondashi seasoning and 1tbsp water for 2 Tbsp. Hikari Miso’s Minute Miso.)
*1 tbsp suger
*1 tsp mirin (Japanese sweet wine)
做法 / Method:
1. 烤箱預熱180 C;將烤盤鋪上錫箔紙。
1.Preheat broiler with the rack about 10 CM from the heat source at 180 C; and line the baking pan with parchment paper.
2.拿一個碗將所有醬汁材料混勻,備用。
2. In a small bowl, combine all the sauce ingredients, mix well and set aside.
3. 茄子切約1.5公分片狀,用刀尖將兩面,左右各斜劃個幾刀程菱角狀。然後將茄子兩面抹點油,這樣茄子才不會黏在烤盤的錫箔紙上。
3. Slice them in 1.5 CM lengthwise from the stem to bottom. With the tip of a knife score the flesh on both side, about 0.3 CM deep 3-4 times across the eggplants. Spray some cooking oil on both side of eggplant.
4. 將醬汁抹在茄子的一面,將烤盤放在離上層熱源約10公分處,烤個5-10分鐘。然後翻面,抹上醬汁,再烤個5分鐘。
4. Brush the sauce mixture on one side of the eggplant, grill for 5-10 minutes. Turn the eggplant, repeat the same step, grill for another 5-10 minutes.
6.盛盤後,灑點綠色小豆苗,香菜或是香蔥、白芝麻、七味粉即可。
6. Sprinkle with sesame seeds and garnish with some bean sprount or green onion. Serve immediately.
